This past week I got to fly out to Las Vegas…FOR WORK. Poor me 🙂

We have the largest event of the year happening at the end of October in the Bellagio so I went with 3 other coworkers for a site visit and initial planning. First, I must say the Bellagio is pure luxury. I can’t thank the team enough times for their hospitality – we felt like Vegas royalty! I am really looking forward to our next round of meetings happening in August. Second, our trip was super productive and the perfect kick-off to plan a successful, educational, and FUN event!

Since this is a food-focused blog I wanted to share a few of the meals (and drinks!) we tasted in Vegas. It is my favorite city to explore restaurants in because you get chefs from all over the world opening some of the coolest restaurant spaces with really unique food. Every time I visit there are new restaurants to try and I am already researching where to go for my next Vegas trip in May!

Check out the spread that came to our door while we were unpacking. The trio of sauces in front of the strawberries is chocolate, caramel, and butterscotch. I WANT MORE.

Later in the evening we had dinner at Stack in the Mirage. The restaurant design is very striking and the dim intimate feel makes you forget you are sitting in the middle of a very busy casino.

The lighting made me pictures not come out so good but I wanted to share anyway. I forget the actual name of this drink but it had ginger in it.

Pigs in a blanket and Yellowtail Crunch which was Yellowtail tartare with spicy sesame sauce on a crispy wonton chip.

I had a petite filet for dinner with whipped mashed potatoes but the picture was SO bad I couldn’t stand to look at it.

If you walk off the casino floor at the Bellagio you will find Jean Philippe Chocolates and the famous chocolate fountains. Here you can find pastries, truffles, crepes, cakes, sandwiches and salads. I have never eaten at this one but last May my sister and I tried the crepes at the location at Aria and they were out of this world!

Lunch poolside is always a treat and this Grilled Shrimp and Papaya Salad with Jicama and Citrus Soy Dressing was nice and light. Perfect for the 80 degree weather. The papaya was perfectly ripe and the shrimp were the slightest bit spicy.

I met up with some friends who live out in Vegas now and we grabbed dinner at Holsteins in the Cosmopolitan hotel. Since I haven’t seen them for almost a year I didn’t want to spend my dinner snapping pictures so all I have is the outside wall of the restaurant. A Holstein is a breed of cow and are the world’s highest-production dairy animals. You can see in the photo, and throughout the restaurant, the fun images of cows depicted in bright, eye-catching colors.

Their menu focuses on natural and organic ingredients with tons of specialty burgers and “Bam-Boozled” alcoholic shakes. I tried the The Classic burger with bacon and sweet potato fries. I am not a huger burger lover but this one was awesome. It was exactly how you would pictures a perfect, simple burger to be. If you like beer they have a large selection but your best bet is to fill up a 64 oz Growler (refills are only $15) – you can take it with you when you leave even if there is beer still in it. This is Vegas after all!

Earlier in the day my coworkers and I did a walk through of Hyde for the opening of our event in October. I loved it so much I had to head back there at night to grab a drink and sit pretty much next to the Bellagio fountains.

I had the red drink on the left called the Love Unit which was Absolut Vodka, Absolut Vanilla Vodka, Thai Basil, freshly pressed lime, grapefruit and hand extracted bell pepper juices. It sounds like a weird combo but it tastes great all together and was a really light, but strong, drink. It was featured in The New York Times and was definitely a drink I would go back for again.

My friend had the Snow Flake which was Ciroc Coconut, Malibu, white cranberry juice, freshly pressed lemon juice, and dusted with coconut flakes. I’m not a huge coconut fan but I tried and sip and really liked it. Fresh coconut makes all the difference.

I am SO excited to be heading back to Hyde in May to celebrate my sisters birthday!

We had some time before we had to head to the airport so we headed back to the Pool Cafe for breakfast. I got the All American breakfast with 2 eggs over easy, bacon, hash browns and rye toast. They surprised me with a broiled tomato topped with pesto and parmesan cheese that was packed full of flavor. It was a perfect breakfast and kept me full for my flight home.

Another great Vegas trip full of great food and drinks. I was really sad to leave but I’ll be heading back at the end of May for my sisters birthday and a tradeshow at the Wynn, August to meet with the wonderful team at the Bellagio again, and then October for our event and some Halloween fun (at the Bellagio as well).  I can’t wait to see what new restaurants pop up between now and then 🙂

    1. The menu was so cute too…they list the pigs in a blanket, and then say “Yes, we tuck them in ourselves”
