3 Ingredient Chocolate Peanut Butter Cups

Hi everyone! Wow – it has been SO long since I have posted here and it feels good to be back! December and January were difficult trying to adjust to my new job and traveling a lot (Portland, Austin, Chicago, Orlando). On top of that it was the holidays, holiday parties and just winter in general making me want to cozy up and eat EVERYTHING.

This morning I stepped on the scale and was sad to see it has gone up almost 5lbs since I last weighed myself in the beginning of December. However, the 21 Day Fix Extreme launched this month and I am going full force with the workouts and nutrition plan starting today!! This morning I completed Plyo Extreme (what a hard leg workout!) and drank my chocolate shakeology with 1/2 a frozen banana and a teaspoon of Nutella and feel great!!

I am so ready to do this – I love Autumn Calabrese and 21 days flies by!

One thing that helps me stay focused is tracking my allotted portion containers by writing down all of my meals. Meal prepping and grocery shopping ahead of time is the KEY to success with this program.

When I first started the original 21 Day Fix back in September 2014 I lost 4.4lbs in my first week! My 1st goal for this round is to shed my gained weight this week and just in time for 2 of my very good friends to get married this weekend in Newport, RI. Luckily, my roommate and handful of my closest friends are also doing this program at the same time which helps me stay motivated and on track! On top of that, we are all part of a Facebook challenge group filled with wonderful people all doing 21 Day Fix Extreme and sharing their tips, tricks and recipes.

One of the hardest things for me when trying to eat clean is my craving for dessert. I work so hard and eat so well all day I don’t want to blow it after dinner by eating junk! When I found a recipe for Chocolate Almond Butter Bites on Pinterest I was so excited! I loved the simplicity of the recipe and that they were made with 3 healthy ingredients, one of them being Chocolate Shakeology which I have plenty of in the house 🙂

This recipe takes about 5 minutes to put together and I swapped out the almond butter for natural peanut butter because that is what I had in the house. I love how they turned out and they are the perfect dessert bite to curb my after dinner craving for chocolate. I used a mini muffin tin to shape them but you could also use an ice cub tray.

3 Ingredient Chocolate Peanut Butter Cups

Ingredients
  • 4 tablespoons of coconut oil
  • 8 tablespoons of chocolate shakeology
  • 4 teaspoons of natural peanut butter
Instructions
  1. Place 2 tablespoons of coconut oil in a microwave safe bowl. Microwave for 30 seconds until the coconut oil is liquefied.
  2. Stir in 4 tablespoons of chocolate shakeology.
  3. Divide the chocolate mixture evenly between 8 spots in a mini muffin tin.
  4. Place in the freezer for 5 minutes.
  5. Pull the muffin tray out of the freezer. Place a half a teaspoon of peanut butter on top of each chocolate disk. Spread the peanut butter evenly over the hardened chocolate with a knife.
  6. Melt the remaining 2 tablespoons of coconut oil in the microwave.
  7. Stir in the remaining 4 tablespoons of chocolate shakeology in. Use this to pour on top of the peanut butter layer.
  8. Place the muffin tin back in the freezer and leave it in there for at least 30 minutes.
  9. The chocolate cups will slide easily out of the tin.
Notes
You will want to melt the coconut oil and stir in the chocolate shakeology in two batches so it doesn’t harden up on you while the first layer of chocolate is hardening in the freezer.[br][br]Keep the cups stored in the fridge or freezer for the best consistency.[br][br]21 Day Fix Container Equivalent: I usually consider these a splurge and do not count them but you could count as 2 spoons per cup.

    • Hi Melissa, I typically have 1 per serving and I don’t count them towards containers because the amount of each ingredient in each chocolate cup is so minimal. I don’t eat them every day so I consider it a splurge, and a much healthier splurge than reaching for an actual Reese’s cup! If you were to count it as a container you could say 0.25 – 0.5 spoons for the oil and peanut butter depending how many of them you eat. I hope this helps!

  1. I am allergic to coconut, so I cannot use coconut oil. Is there another type of oil that you might recommend to use in this recipe?

    • Hi Renee – I treat these as a splurge and since there is so little of each ingredient in each peanut butter cup I don’t count them. If you wanted to count them I would say say 2 cups = 0.25 red and 0.5 spoon 🙂 But that is just my guess!

  2. I would count these as 2 teaspoons each, since 4 TB of oil (12 tsp) + 4 tsp peanut butter are divided into 8 cups. 16/8=2

    However a good alternative to coconut oil allergies is to just use water to mix with the Shakeology. Use enough to make it pudding thick. Saves a lot of teaspoons too!

    • One chocolate scoop or packet = 5.3 Tablespoons, if that helps!

      I’d use 2 full packets (10+ Tablespoons) then add 1 extra Tablespoon of coconut oil. You’ll have two options then: Make the chocolate layer a little more thick or make an extra treat or two!
