It’s April!!!!

And it might hit 60 degrees in Boston today! Finally an end to all this cold and miserable weather. To me, that is a reason to celebrate and tonight I am going out with a group of friends to The Vault in downtown Boston to see Jason Cardinal perform. Today’s chicken salad recipe is adapted from one of my very best friends recipes. She is a new Beachbody coach on my team and is jumping right in helping others reach their health and fitness goals and I could not be more proud of her!!! This is a great healthy alternative recipe compared to store bought chicken salad and it uses NO MAYO! I promise you the consistency of the chicken salad you know and love is still there even without it.

For this recipe I used a store bought rotisserie chicken but you could boil chicken breasts and shred them or make pulled chicken in the crock pot for this as well. I also did not measure out the quantity of Greek yogurt and spices because this is a personal preference based on your tastes.

This makes a LARGE batch of chicken salad so when it came time to eat I measured it out in my red 21 Day Fix container and placed over a spinach and tomato salad with a side of balsamic dressing.

Greek Yogurt Chicken Salad with Grapes and Celery

Ingredients
  • 1 cooked rotisserie chicken, skin removed
  • Plain Greek yogurt, to taste (I used between 1 cup – 1.5 cups)
  • Poultry seasoning, to taste
  • Black pepper, to taste
  • 3 celery stalks, diced into small cubes
  • 1 cup of red grapes, halved
  • Lemon juice (optional)
Instructions
  1. Pull all of the cooked chicken off of the bones and place into a large mixing bowl.
  2. Add in plain Greek yogurt until you get a consistency you like.
  3. Add enough poultry seasoning and black pepper for your personal taste.
  4. Mix in the diced celery and grapes.
  5. Add a squirt of lemon juice (optional) for a little flavor boost.
Notes
21 Day Fix Container Equivalents for a 1 cup serving of chicken salad: 0.5 green, 1.5 red, 0.5 purple

      • I\’m curious..what is the poultry seasoning? Is it a 21 day fix seasoning recipe or one that you can buy prwnade at the store?

        My poultry seasoning has sage, oregano, rosemary, basil, thyme and salt. I bought it premade at the grocery store but you could totally make your own! If I was going to make my own I would probably use sea salt or omit the salt all together.

    • Hi Kara, if you are looking to measure out just the chicken salad I would scoop it all into your red container (3/4 cup) and count it as 1 red. I typically don’t count the grapes and celery since there are so few in each portion but if you wanted to count those separately you could count them as 0.25 purple (1/4 cup) and 0.25 green (1/4 cup). I hope this helps!

  3. I am super new to the 21 day fix and trying to grasp this container thing …does the Greek yogurt in the recipe increase the amount of the red portion you are using, or is the amount small enough to not impact it

    • Hi Hillary, yes the greek yogurt will increase the amount of protien so what I do is make the chicken salad in a large bowl and then measure it out completley mixed in my red container to ensure that I am not going over my serving size. Hope this helps!

  5. This was a great substitute for chicken salad growing up in the South! I added a little bit of mustard along with the wet ingredients. Placed on top of spinach and cabbage slaw. Very yummy!

  6. Sorry, a tad bit confused. Have had the program for a year but just now putting it to use. Still figuring out the containers but where does the green container come in to play in this recipe? Is the green container accounting for spinach/lettuce or is that simply for the 3 stalks of celery? I may have overlooked this. Please inform. Thanks!

    • The 1.5 green container is counting for the spinach and tomatoes in the salad. There is minimal celery in each serving of chicken salad so I don’t count it since celery is low in calories anyway 🙂 Hope this helps!

    • Hi Amanda, I am not sure as I have never tried it with vanilla greek yogurt. I would suggest testing a little portion out that way if you don’t like it you can go back and get regular greek yogurt to use for the rest of it.

  9. Okay wasn’t to sure about this one but i thought i would give it a try. Not to mention I’m not a big fan of yogurts. Wanted to start eating better especially at night when I have cravings the most. So i just finished making this and it was amazing…going to start making this dish weelky..:)

  10. Emily this is AMAZING!!! I just started the 21 day fix and the first 2 days were such a struggle eating boring chicken or meat. This is just what I needed to sink my teeth into! Question…..Is it really just .25 red with the chicken and yogurt? Is it just deceiving because of the other ingredients and how they take up space? I would have guessed 1.5 reds!

  11. I’ve been to two different stores & can’t find 1% greek yogurt. I became impatient looking & purchased non-fat….wish me luck.
    Also, was reading through the comments, where can I purchase the Fage brand?

    • Non-fat will work great. I actually recently switched over to non-fat instead of 1%. Fage is a common brand that should be able to be found in your local grocery store or Target/Walmart superstore.
