How is everyone feeling in this post-Thanksgiving week? Still stuffed? Trying to get back into your routine?
I way over indulged this weekend but ya know what…I DON’T CARE!! I knew the holidays were coming and I prepared for it! I am all about the 80/20 rule and good food and drinks are meant to be enjoyed from time to time.
This week is exciting…
Last night I went to the Boston Bloggers Holiday Meet Up at Bastille Kitchen with my good friend Jaime. It was so nice to see some of my fellow bloggers and meet a lot of new ones! I always love talking with other bloggers because we chat about social media (of course!) which is always a favorite topic of mine. On top of that there were some great passed apps and of course booze!
Today I am buying the brand new Hammer & Chisel program and I have brand new Bowflex SelectTech Adjustable Dumbbells and a workout bench that folds up to save space to go with it! I really think this is going to be my soulmate program since it is heavily focused on resistance training rather than cardio. I hate cardio!
Tonight I have dinner with all the wonderful people I have met through being a Beahbody coach…we haven’t been all together since July in Nashville! I can’t wait to see them!!
Thursday is the annual Southie Holiday Stroll and I can’t wait to shop local and take advantage of some holiday discounts and watch the annual tree lighting on East Broadway. I was completely blown away with the quality of the products I received from D’Artagnan. It is such a treat to cook lamb, especially a rack as beautiful as the one from D’Artagnan. And how about those chicken wings?! There was SO much meat on them.
I had some friends over as soon I got them and made a big batch of my Balsamic Chicken Wings and we happily enjoyed them while having a movie day. Everyone loved them!
For the lamb I wanted to use a simple recipe as to now overpower the meat since it is so tasty on my own. I opted for a basic olive oil and rosemary seasoning mixture and served it over some whole grain pasta and sauteed spinach and garlic with parmesan.
There was so much meat on these babies that 2 of them filled me right up 🙂
- 1 rack of D’Artagnan Free Range Lamb
- Salt and pepper
- 2 tablespoons olive oil
- 1 tablespoon dried rosemary
- Arrange the oven rack so that the lamb will be in the middle of the oven. Preheat your oven to 450 F.
- Place the rack fat side up on a baking sheet lined with tin foil. Score the fat, by making sharp shallow cuts through the fat, spaced about an inch apart.
- Season generously with salt and pepper.
- Rub the olive oil and dried rosemary into the lamb.
- Roast in the oven for 20-25 minutes (depending on the size of the rack and how well done you want it) until a meat thermometer inserted into the thickest part of the meat reads 135 F (for medium rare).
- Remove from oven, cover with foil and let rest for 15 minutes.
- Cut lamb chops away from the rack by slicing between the bones.
