Pasta Primavera

April 30, 2018 / Emily G. / Leave a comment

I am quickly falling in love with every variety of skinnypasta™ from Gabriella's Kitchen! First was the low carb, high protein fettuccini. Now it is the gluten free and vegan Teff penne.     I am not gluten free or vegetarian/vegan but I do know many people who are and I absolutely LOVE creating recipes that … Continue reading Pasta Primavera

Turkey Mini Meatloaves

August 21, 2017April 29, 2020 / Emily G. / Leave a comment

The recipe came about because I just bought these colorful silicone baking liners and wanted an excuse to use them.     I am a huge fan of making mini meatloaves because I find it way easier than having to roll out meatballs and it is a great way to use up any leftover veggies … Continue reading Turkey Mini Meatloaves

This sauce is legit knocking my socks off. WHOA. Peanut butter caramel sauce that is not only super easy to make but won't completely blow up my nutrition for the week?   SIGN. ME. The Almond Encrusted Salmon with Beurre Blanc sauce is one of my all time favorite dishes at Legal Seafood. I order it pretty much every time I am there! While the sauce is outta this world if I want to eat this dish regularly yet still stay on track with my nutrition plan the beurre … Continue reading Almond Encrusted Salmon

Mango Cauliflower Fried Rice

March 3, 2017May 9, 2020 / Emily G. / Leave a comment

This twist on my recipe for cauliflower fried rice has me feeling all the feels.  I needed a side dish for my coconut chicken tenders and figured what paired better with coconut than mango? I am a huge fan of pineapple in fried rice so I figured mango would be amazing as well. And I … Continue reading Mango Cauliflower Fried Rice

Coconut Chicken ? Where have you been all my life?? Coconut and chicken is one of those perfect combinations that satisfies both flavor and crunch! Jalapeno Cheddar Beef Chop Suey

December 7, 2016April 29, 2020 / Emily G. / Leave a comment

I have been obsessed with a recipe for Jalapeno Cheddar Burgers that are part of my Core De Force eating plan. The burger form of this recipe is SUPER tasty and easy to make but I found myself cutting up the leftover burgers and mixing them with additional veggies and rice which was also SUPER … Continue reading Jalapeno Cheddar Beef Chop Suey

Healthy Chocolate Pudding

November 17, 2016 / Emily G. / Leave a comment

I am the girl who will pick savory over sweet pretty much any day of the week. I rather have spaghetti and meatballs over an ice cream sundae but occasionally the craving for something sweet and chocolaty will hit. And when it hits, it hits HARD. If it's a special occasion I will bake up a … Continue reading Healthy Chocolate Pudding

My craving for everything pumpkin has not died down since October. How adorable is this little pumpkin I found at the grocery store? I couldn't resist buying it! Once I brought it home I started to scan Pinterest looking for unique pumpkin recipes and I came across a recipe for pumpkin dressing which I thought would pair … Continue reading Pumpkin Dressing

Stuffed Acorn Squash

October 27, 2016April 29, 2020 / Emily G. / 2 Comments

Stuffed acorn squash is one of my favorite fall dishes to cook. I find acorn squash a lot easier to cut than butternut squash or spaghetti squash and the filling could be anything and everything you already have in your kitchen.   I opted to go full on fall with this and I love the … Continue reading Stuffed Acorn Squash

Sous vide is my favorite way to cook pork and steaks, especially since I don’t have a grill 🥩 Looks super fancy but actually is super easy and never overcooks the meat 👌🏻 A quick sear in the cast iron (or a few minutes under the broiler) always finishes it with the perfect sear too! I use the @anovaculinary sous vide and I love the app which connects via Bluetooth to easily keep my eye on temperature and cook time.
75 and sunny in Boston today (in November!!) so not quite soup weather 😎 But once the temp drops I will wish I had a bowl of this #wontonnoodlesoup from Noodles in the @bellagio hotel 🍜
If you find yourself at @junesallday I highly suggest you get the Couscous with Caponata + Sumac Yogurt…and don’t forget to add the shrimp kebab. Or the grilled lamb. Or the vegetable skewer. All = 🤩
Weeks later and I’m still wishing I could have @carbone_lv spicy rigatoni all over again 😍
The trick to creamy chicken noodle soup without using actual cream? Sauté your vegetables and once tender add some flour. Let it cook for 2-3 minutes then add chicken broth. Bring to a boil then turn to a simmer. Add cooked chicken, uncooked noodles of choice, and milk (I used almond) and simmer for 10 minutes, or until noodles are cooked and soup has slightly thickened 🍲😍 I adapted a recipe from @sallysbakeblog omitting the potatoes but this filling dinner is approx 200 calories per one cup serving and packed full of protein 👌🏻
