Almond Encrusted Salmon
Serves: 4
  • 1 lb of salmon (cut into 4 pieces)
  • Pink Himalyan salt, to taste
  • Pepper, to taste
  • 1 egg
  • ½ cup sliced almonds
Pre heat the oven to 375 F.
  1. Season the salmon with salt and pepper
  2. Crack an egg into a bowl and scramble with a fork
  3. Dip each piece of salmon into the egg and then into the sliced almonds (press hard so the almonds stick!)
  4. Lay the salmon on a baking sheet and bake for 15-20 minutes depending on the thickness of the salmon
Portion Fix equivalents for 1 piece of salmon: 1 - 1.5 red (depending on the size of the piece) and 1 blue

If the almonds aren't as toasted as you would like them to be broil the salmon for 2-3 minutes at the end of cooking - just keep an eye on it so it doesn't burn!
