It’s April!!!!

And it might hit 60 degrees in Boston today! Finally an end to all this cold and miserable weather. To me, that is a reason to celebrate and tonight I am going out with a group of friends to The Vault in downtown Boston to see Jason Cardinal perform. Jason is a super talented one-man-band that we first saw perform in Newport, RI last summer. Check him out…you might see him on America’s Got Talent one day soon!

A new month with Beachbody means new promotions on some of their very best products. For the month of April don’t miss out on your opportunity to snatch up these very popular and effective programs, all including Shakeology of course 🙂

April 2015 promos

PiYo Kick Start Challenge Pack

I own PiYo and it is one of the HARDEST workouts I have ever done. I never thought a workout using only body weight and low impact moves could be so effective but if you are looking to totally change the shape of your body and tone up this is the program for you!

If you are interested in any of these programs feel free to email me at ?[email protected] or leave a message in the comments section of this post. I would love to help you get started with a program to help you reach YOUR goals.

Today’s chicken salad recipe is adapted from one of my very best friends recipes. She is a new Beachbody coach on my team and is jumping right in helping others reach their health and fitness goals and I could not be more proud of her!!! This is a great healthy alternative recipe compared to store bought chicken salad and it uses NO MAYO! I promise you the consistency of the chicken salad you know and love is still there even without it.

For this recipe I used a store bought rotisserie chicken but you could boil chicken breasts and shred them or make pulled chicken in the crock pot for this as well. I also did not measure out the quantity of Greek yogurt and spices because this is a personal preference based on your tastes.

This makes a LARGE batch of chicken salad so when it came time to eat I measured it out in my red 21 Day Fix container and placed over a spinach and tomato salad with a side of balsamic dressing.

Leave me a message if you try this recipe out – I love hearing from ya!

I really enjoyed making this chicken salad it was very easy and made so much for the little ingredient needed it was great for my house warming party..

    1. I love to hear that Karina!! I am so happy you enjoyed it 🙂

      1. Jenn

I\’m curious..what is the poultry seasoning? Is it a 21 day fix seasoning recipe or one that you can buy prwnade at the store?

        1. Hi Jenn,

My poultry seasoning has sage, oregano, rosemary, basil, thyme and salt. I bought it premade at the grocery store but you could totally make your own! If I was going to make my own I would probably use sea salt or omit the salt all together.

  2. Sandy

Hi there! This looks delicious! How about the grapes? How much of a purple container does each serving have?

    1. Thanks Sandra! I would count 0.25 purples for each serving for the grapes

  3. Kara

what is the exact breakdown of just the salad? If I measured it into one red container what would I could it all as?

    1. Hi Kara, if you are looking to measure out just the chicken salad I would scoop it all into your red container (3/4 cup) and count it as 1 red. I typically don’t count the grapes and celery since there are so few in each portion but if you wanted to count those separately you could count them as 0.25 purple (1/4 cup) and 0.25 green (1/4 cup). I hope this helps!

  4. Thank you for the recipe. I added curry powder instead of poultry season to mine since I love that flavor… I don’t love greek yogurt, but I did love your recipe.
    Thank you!

    1. So glad to hear that Tammy! Thanks 🙂

  5. hillary

I am super new to the 21 day fix and trying to grasp this container thing …does the Greek yogurt in the recipe increase the amount of the red portion you are using, or is the amount small enough to not impact it

    1. Hi Hillary, yes the greek yogurt will increase the amount of protien so what I do is make the chicken salad in a large bowl and then measure it out completley mixed in my red container to ensure that I am not going over my serving size. Hope this helps!

  6. Chrissy

Can I substitute regular plain yogurt instead of Greek yogurt?

    1. Hi Chrissy…I don’t belive you can subsitue out regular yogurt for greek yogurt on the 21 day fix. Sorry!

      1. Chrissy

        Ok. Thanks!

      2. Shannon Blair

You can use either plain 1% greek yogurt or sin 2% regular yogurt on the 21 day fix. Looking at the book right now. Just FYI:)

        1. Shannon Blair

          Sorry- plain 2% regular yogurt

          1. Thanks! I just updated the recipe 🙂

  7. Alicia

I was wondering , can the all white meat canned chicken be used if rinsed and drained?

    1. I would think yes as long as you check the ingredient list and it is all natural with no added ingredients!

  8. Kim

I am not a fan of yogurt in general, but now that I’m on the 21 Day Fix I understand that I can not use Mayo any longer. I am looking forward to trying out this chicken salad recipe!! Thanks

    1. Kim, def check out the Fage greek yogurt brand. I find it the best and most comparable to mayo and doesn’t have that greek yogurt “tang” haha

  9. franker

Hi , I’m new to this 21day fix , can you pls tell me the exact measurement of the red container. Tx

    1. Hi there – it is about 3/4 cup

  10. Ebony

I noticed that you have a dressing pictured. Do you typically use a dressing with this and if so what do you recommend?

    1. Yes, I will use an organic balsamic or make my own from the 21 Day Fix eating guide to put over the salad

      1. Pam

Where can I find the 21 day fix guide??

        1. Hi Pam – I will email you with details!

    2. Brooke

This sounds awesome. I’d love to make this by shredding regular boneless, skinless chicken breasts. About how many pounds (or cups) do you estimate your chicken to be? Thanks in advance!!!

      1. I would us as close to a 1lb pack of boneless skinless chicken for this recipe!

  11. Keri

This was a great substitute for chicken salad growing up in the South! I added a little bit of mustard along with the wet ingredients. Placed on top of spinach and cabbage slaw. Very yummy!

    1. So glad to hear you enjoyed it Keri!

  12. Mar

Sorry, a tad bit confused. Have had the program for a year but just now putting it to use. Still figuring out the containers but where does the green container come in to play in this recipe? Is the green container accounting for spinach/lettuce or is that simply for the 3 stalks of celery? I may have overlooked this. Please inform. Thanks!

    1. The 1.5 green container is counting for the spinach and tomatoes in the salad. There is minimal celery in each serving of chicken salad so I don’t count it since celery is low in calories anyway 🙂 Hope this helps!

  13. lynsey

How long does this last in the fridge for, before going bad? Thanks!

  14. Amanda

Hi Emily, I accidentally bought vanilla flavored Greek yogurt will it ruin this recipe?

    1. Hi Amanda, I am not sure as I have never tried it with vanilla greek yogurt. I would suggest testing a little portion out that way if you don’t like it you can go back and get regular greek yogurt to use for the rest of it.

  15. Jan

Is there a section in the instructional information that discusses adjusting caloric intake for breastfeeding then? Just wondering, because I am nursing & have been thinking about this. Thanks Emily

  16. Meghan

Do you know the calorie count in a serving? I made this and it was very tasty

    1. I do not know the calorie portion per serving, sorry! I follow the 21 Day Fix nutrition and we count by portion.

  20. Emily this is AMAZING!!! I just started the 21 day fix and the first 2 days were such a struggle eating boring chicken or meat. This is just what I needed to sink my teeth into! Question…..Is it really just .25 red with the chicken and yogurt? Is it just deceiving because of the other ingredients and how they take up space? I would have guessed 1.5 reds!

    1. THANK YOU! I had a typo in my container counts and I just updated it!! 0.5 green, 1.5 red, 0.5 purple for a 1 cup serving 🙂

  21. Anna

I’ve been to two different stores & can’t find 1% greek yogurt. I became impatient looking & purchased non-fat….wish me luck.
Also, was reading through the comments, where can I purchase the Fage brand?

    1. Non-fat will work great. I actually recently switched over to non-fat instead of 1%. Fage is a common brand that should be able to be found in your local grocery store or Target/Walmart superstore.

  22. Tandra

How much yogurt do you think you use?

    1. It really depends on your personal taste and how much chicken you are using. I probably used between 1 cup to 1.5 cups.

  23. Sandra Hudson

Is there a salad dressing in the orange container? If so, what is it?

    1. Yes it is organic balsamic!

  24. Crystal

I made this today and it is amazing. I will never have to worry about restricting chicken salad from my diet again because this tastes even better to me! Thanks for posting.

    1. emilyjgoodman

I am so glad to hear that!!! Enjoy 🙂

    1. emilyjgoodman
